The Barbeque , a sizzling history

Grab a napkin, some killer toppings and your Steakhouse Elite burgers, we have a story to tell about the flavorful beginnings of our favorite food-related past-time, the barbecue, that begins 1.5 million years ago. And while it's modern-day common summer practice for long weekends, tailgates and celebrations, it started with the beginning of man, when early humans discovered fire and began cooking meat over open flames. This method was not only practical but also delicious, but it paved the way for the barbecue we know and love today.

Spanish Beginnings and American Adoption

The word "barbecue" has its roots in the Caribbean when the Taino people called their cooking method "barbacoa," which involved slow-cooking meat over a wooden platform. Soon after, Spanish explorers adopted the term and introduced it to the American colonies, where it began to evolve into various regional styles.

When European colonists arrived in the Americas, they brought with them their own barbecuing techniques. The English, French, and Spanish each had unique methods, leading to a melting pot of flavors; a diverse background which has become the backbone of America's rich barbecue culture.

Move forward to the Civil War, which played a huge role in popularizing barbecue in the United States. Troops often had to cook large amounts of meat to feed soldiers, making BBQ a go-to method. Post-war, these techniques spread throughout the country, making barbecue a nationwide favorite.

Following the Civil War into the Industrial Revolution, these times brought with it more modern tools and techniques to the masses. Suddenly, barbecue wasn't just for the elite; it became accessible to the working class. This era saw the rise of homemade grills and smokers, bringing BBQ to backyards everywhere.

The mid-20th century marked the golden age of barbecue. It became more than just a meal; it turned into a social event. Barbecue competitions and festivals started popping up, turning this culinary tradition into a beloved pastime.

Fast forward to the 21st century, and barbecue has gone global. Thanks to the internet and social media, pitmasters from around the world share techniques, recipes, and tips, making it a truly international affair.

The American Barbecue Today

Barbecue has always been more than just food. It's a centerpiece at social gatherings like family reunions, community events, and national holidays. It brings people together, fostering a sense of community and shared experience. In America, the popularization of the barbecue has created a variety of tastes and techniques from e
ach region in the U.S., creating a unique barbecue style in different areas and  becoming a source of local pride. Whether it's the tangy vinegar-based sauces of the Carolinas or the sweet tomato-based sauces of Kansas City, barbecue is a culinary identity:
  • Carolina BBQ: Known for its vinegar-based sauces and whole hog cooking.
  • Texas BBQ: Famous for its brisket, seasoned with just salt and pepper.
  • Kansas City BBQ: Loves its sweet, tomato-based sauces and a variety of meats.
  • Memphis BBQ: Renowned for its dry-rubbed ribs.

And let's not overlook the humble hamburger, a staple of American BBQs. While not "barbecue" in the traditional sense, it has earned its spot on the grill and in our hearts, alongside other common meats like pulled pork baby back ribs, smoked brisket, grilled veggies and chicken wings. All of this is because barbecue isn't just a way of cooking; it's a way of life. From ancient times to the digital age, it has evolved and adapted, becoming a beloved tradition across the globe.
